Step 1
Cut the
Cauliflower (1/2 head)
into small florets and add them to the work bowl of a food processor. Pulse until the cauliflower is chopped into fine granules resembling couscous.
Step 2
Transfer the cauliflower to a bowl. Add the
Olive Oil (22 mL)
,
Garlic (1 clove)
and
Frozen Green Peas (110 g)
. Toss to coat and cover tightly with plastic wrap. Microwave for 3 minutes on high power.
Step 3
Add the sliced
Grape Tomatoes (150 g)
, zest from
Lemon (1/4)
and
Parmigiano-Reggiano (50 g)
and toss until well combined. Check for seasoning, adding
Salt (to taste)
and
Ground Black Pepper (to taste)
if needed.
Step 4
Serve with additional grated Parmigiano Reggiano if desired. Enjoy!
