Step 1
Heat a large pan over medium/high heat. Add
Coconut Butter (2 g)
and
Onion (1)
. Cook for 30 seconds to 1 minute. Be careful not to burn the onions.
Step 2
Dice the
Chicken Breasts (450 g)
into 2cm pieces.
Step 3
Add chicken and
Garlic (2 cloves)
on a pan. Season with
Dried Basil (to taste)
,
Dried Oregano (to taste)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
. Cook chicken for 5-6 minutes or until golden.
Step 4
While the chicken is cooking, spiralize the
Zucchini (2)
. If you don’t have special spiralizer, then just use your vegetable peeler and make ribbons out of zucchini.
Step 5
When the chicken is golden, then add
Canned Crushed Tomatoes (400 g)
and let it simmer for 3-5 minutes.
Step 6
While the chicken is cooking, roast the
Raw Cashews (100 g)
in another pan until golden. Season with
Paprika (to taste)
,
Ground Turmeric (to taste)
, and
Salt (to taste)
.
Step 7
Add spiralized zoodles, you might need to cut the zoodles shorter when they are too long,
Cherry Tomatoes (7)
and season with
Salt (to taste)
when needed. Cook for another 1 minute then turn off heat.
Step 8
Serve the chicken zoodles with spiced cashews and
Fresh Basil Leaves (to taste)
