Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a medium size bowl, combine
Spelt Flour (230 g)

Baking Powder (4 g)

Baking Soda (5 g)

Ground Cinnamon (3 g)

Ground Ginger (2 g)
,
Ground Nutmeg (1 g)
,
Ground Allspice (as needed)
, and
Ground Cloves (1 pinch)

Step 3
In a small bowl, combine
Vegetable Oil (80 mL)
,
Coconut Sugar (110 g)
,
Water (80 mL)
and
Vanilla Extract (5 mL)
.
Step 4
Add the wet mixture to the dry mixture along with the
100% Pumpkin Purée (1 can)
. Mix well making sure there are no flour clumps. Taste the batter and adjust the flavor or sweetness to your liking.
Step 5
Pour batter into a lightly greased loaf pan. Sprinkle the top with
Pepitas (to taste)
, if desired. Bake for 50-55 minutes.
Step 6
Once done, remove from oven and let cool slightly before serving.

Let cool completely before storing.
