Author's Notes

Both the filling and the cookie dough can be made ahead of time and can be kept in the fridge for up to 2 days or up to a month in the freezer.

Cooking Instructions

Step 1
First, make the cream cheese filling. In a large mixing bowl, combine Cream Cheese (130 g) , Powdered Confectioners Sugar (30 g) , Salt (2 g) , All-Purpose Flour (10 g) , and Vanilla Extract (2 mL) . Using a hand mixer, beat the cream cheese until fully incorporated, smooth and creamy.
Step 2
Using 2 spoons, dollop roughly 2-inch big balls of the cream cheese mixture on a parchment-lined baking sheet that fits in your freezer. Place the balls apart from each other. Keep them in the freezer for at least 15 minutes or until ready to use.
Step 3
In a stand mixer fitted with the paddle attachment, add in Butter (230 g) and mix on high speed for 30 seconds. Then, add in Caster Sugar (100 g) and Brown Sugar (160 g) , and mix on low speed until just fully combined.
Step 4
Add in White Chocolate Chips (300 g) and mix again on low speed until just combined.
Step 5
In a separate mixing bowl, roughly combine All-Purpose Flour (500 g) with Salt (6 g) and Baking Powder (10 g) with a whisk. Add the flour mixture to the stand mixer and mix on low speed until you reach a sandy texture, about 1 minute.
Step 6
As the stand mixer is mixing, add in Sprinkles (90 g) and continue mixing until just combined. Add in all the Eggs (3) and Vanilla Extract (2 mL) , and mix until a large lump of dough-like mixture forms, about 1 minute.
Step 7
Bring your cream cheese filling out from the freezer to let the temperature come up. Lightly pack the cookie dough into a ball shape that weighs 60g each. Continue with the rest of the cookie dough.
Step 8
Using the palm of your hand, shape the cream cheese filling into perfectly round balls and insert them into one piece of the cookie dough balls. Cover the filling with another piece of cookie dough and roll them in your palms to seal the seam. Set it on a tray that fits in your freezer.
Step 9
Freeze the cookie dough balls for at least 90 minutes or leave them overnight covered in plastic wrap.
Step 10
Preheat the oven to 350 degrees F (180 degrees C) on convection bake with the baking tray in the oven.
Step 11
Place cookie dough balls directly onto the preheated baking tray in the oven and bake for 14 minutes, or until the cookies are golden brown on the outside.
Step 12
Let the cookies set for 10 minutes before moving them to a cooling rack to cool completely for storage. For better taste, enjoy them warm!
