Step 1
Preheat oven to 350 degrees F (180 degrees C). Spray a 12-well muffin tin with Coconut Oil Cooking Spray (as needed) . Line each well with a paper liner.
Step 2
In a bowl, whisk together the Almond Flour (240 g) , Ground Cinnamon (3 g) , Baking Powder (4 g) , Baking Soda (2 g) , Ground Mahlab (as needed) , Ground Nutmeg (as needed) , and Salt (2 g) .
Step 3
In a large mixing bowl, stir together the Bananas (3) , Almond Butter (160 g) , Milk (80 mL) , Honey (115 g) , Coconut Oil (60 mL) , Egg (1) , and Almond Extract (2 mL) .
Step 4
Combine the wet and dry ingredients. Stir together until just combined into a thick batter.
Step 5
Evenly divide the batter among the prepared muffin pan, filling each one almost to the top.
Step 6
Bake the muffins for about 20-25 minutes, until they are springy and a toothpick comes out of the center cleanly.
Step 7
Let muffins cool, then store them in an airtight container. Enjoy!
