Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Slice the Apples (2) in half close to the stems, making 2 apple 'lids'.
Step 3
Core the bottom halves. You can use an apple corer if you got one or a sharp knife. Make sure the apples stay in one piece.
Step 4
Brush the top of the apples with the juice from Lemon (1) and place the lids back on them. Place the apples in an oven dish.
Step 5
Place the apples in a preheated oven at 400 degrees F (200 degrees C) for 30 minutes. After that let the apples cool a little.
Step 6
In the meantime, roughly crush the Pistachios (1 handful) and lightly toast them over medium heat for 3 to 4 minutes while tossing them regularly.
Step 7
Place the baked lukewarm apples onto plates and top them with a tablespoon of the Ricotta Cheese (30 g) . Sprinkle with the toasted nuts, Fresh Mint Leaves (4) , Ground Cinnamon (as needed) , and Honey (40 g) . Serve immediately.
