Step 1
Preheat oven to 325 degrees F (160 degrees C). Insert the base of a 8-inch springform pan lip-side down. Lightly rub with olive oil, then line with parchment. Set aside.
Step 2
Whisk
All-Purpose Flour (125 g)

Ground Cinnamon (4 g)

Ground Cardamom (as needed)

Ground Cloves (as needed)

Baking Powder (6 g)

Baking Soda (2 g)
, and
Salt (3 g)
in a medium bowl.
Step 3
Whisk
Egg (1)
with
Brown Sugar (220 g)
,
Extra-Virgin Olive Oil (160 mL)
and
Water (80 mL)
in a large bowl.
Step 4
Stir flour mixture into egg mixture. Stir in grated
Apples (125 g)
and then fold in chopped
Apples (125 g)
. Scrape batter into the prepared pan and smooth the top.
Step 5
Arrange overlapping slices of
Apples (125 g)
around the top of the cake. Brush apple slices with
Olive Oil (15 mL)
and then sprinkle with
Brown Sugar (15 g)
.
Step 6
Bake in center of oven until a tester inserted into cake comes out clean, about 45 minutes.
Step 7
Transfer to a rack to cool. Run a knife between the pan and the outer edge of the cake, then remove ring. Let cool completely, about 1 hour.
Step 8
Serve with Greek yogurt or whipped cream. Keeps well at room temperature for up to 3 days.
