Prepare Farro (285 g) per package directions. While farro is cooking, prepare the dressing.
Step 2
In a small bowl, whisk together the Champagne Vinegar (45 mL) , Dijon Mustard (10 g) , Shallots (3 g) , Kosher Salt (5 g) , and Freshly Ground Black Pepper (1 g) . Continue to whisk while slowly adding the Olive Oil (60 mL) until the vinaigrette is well combined. Stir in the Chinese Chives (6 g) .
