Step 1
Place the Fresh Cilantro (115 g) , juice from Limes (2) , Olive Oil (60 mL) , Garlic (1 clove) , Dijon Mustard (10 g) , Granulated Sugar (8 g) , Ground Turmeric (1 g) , Salt (2 g) , and Freshly Ground Black Pepper (to taste) in a food processor or blender.
Step 2
Purée until smooth. Taste. Adjust dressing with more salt, pepper, lime, oil, etc.
Step 3
Place Canned Chickpeas (455 g) in a large bowl. Add Red Onion (1) . Toss with dressing to taste.
Step 4
Taste, adjust with more salt if necessary.
