Season both sides of the Cod (455 g) with pepper and salt.
Step 2
Heat up Coconut Oil (15 mL) in a pan over medium-high heat.
Step 3
Sear for about 3 minutes on each side. Once cooked, the fish should easily flake with a fork.
Step 4
Prepare the salsa: combine Canned Diced Pineapple (285 g) , Peach (1) , Black Bean Salsa (200 g) , Whole Kernel Corn (115 g) , Red Onion (1/2) , Fresh Cilantro (2 g) , Lime (1/2) , and Jalapeño Peppers (6 g) . Serve and enjoy!
