In a large soup pot, add a generous splash of Olive Oil (1 Tbsp) over medium-high heat. Add the Onion (1) and Garlic (3 cloves) and stir until fragrant, 1 minute.

Add the Carrots (2), Lemon Zest (1), Freshly Ground Black Pepper (1 tsp), and Celery (5 stalks), and cook until the vegetables begin to soften, 4-5 minutes.

Add the Rotisserie Chicken (1), lemon juice, Bay Leaf (1), and Chicken Broth (8 cups) to the pot. Simmer for an additional 10-15 minutes, until the vegetables have softened.

Add the Cheese Tortellini (1 pckg) and cook according to directions on the package.

Taste and adjust seasoning as needed. Serve this Chicken Tortellini Soup in large bowls, garnished with Fresh Parsley (to taste) and Ground Black Pepper (to taste). Enjoy!
