Cooking Instructions

Step 1
Slice the Okra (250 g) into 1/2-inch pieces.
Step 2
In a large pot, heat up Canola Oil (30 mL) . Fry okra until they start to brown, about 5-7 minutes. Remove from pot and set aside.
Step 3
To make your own Cajun seasoning blend, mix Salt (9 g) , Ground Black Pepper (1 g) , Cayenne Pepper (2 g) , Paprika (5 g) and Dried Oregano (4 g) together in a small bowl.
Step 4
Over medium-high heat, add Canola Oil (30 mL) , Unsalted Butter (30 g) and All-Purpose Flour (30 g) to the pot. Stir with a wooden spoon constantly until the mixture smells nutty and turns a medium-shade of brown, about 3-4 min.
Step 5
Add the prepared Red Chili Pepper (1) , Green Bell Pepper (1) , Yellow Onion (1) , Garlic (3 cloves) , and Tomatoes (3) . Stir, scraping the bottom of the pot and cook until softened, about 6-8 minutes.
Step 6
Add 2 tablespoon of prepared Cajun Seasoning, cook for an additional 1 minute.
Step 7
Add Bay Leaves (2) and Chicken Stock (1.2 L) . Bring to a simmer and simmer for about 30 minutes.
Step 8
Add Shrimp (455 g) and cook until they are fully pink and cooked through. Add the okra back to the pot and serve with rice.
