Step 1
Preheat oven to 350 degrees F.
Step 2
Cube the
Butter (60 g)
(2 ounce). Peel, pit, and slice the
Peaches (2)
. Add
Dried Cherries (40 g)
and
Amaretto (30 mL)
to a small bowl. Microwave for 30 seconds to warm, and set aside to allow cherries to plump.
Step 3
Add
Brown Sugar (55 g)
,
All-Purpose Flour (30 g)
,
Oatmeal (10 g)
,
Ground Cinnamon (1 g)
and
Salt (2 g)
to a small bowl. Toss to combine. Add butter and rub in with your fingers until well mixed. Add
Sliced Almonds (25 g)
.
Step 4
Stir until combined, then set aside. Melt
Butter (30 g)
in a small cast iron skillet over medium heat. Add peaches, amaretto soaked cherries,
Granulated Sugar (10 g)
and
Corn Starch (2 g)
. Cook for 2-3 minutes until liquid thickens slightly.
Step 5
Remove pan from heat and divide crisp mixture in chunks on top of peaches. Bake 20-25 minutes, until golden brown.
Step 6
Remove from oven and cool for 5-10 minutes before serving with
Ice Cream (to taste)
