Author's Notes

You can replace cinnamon, cloves, ginger, and nutmeg with 2 Tbsp of pumpkin spice.

If you prefer a savory flavor, replace cinnamon, cloves, ginger, and brown sugar with 1 tsp of freshly ground black pepper and of 1 Tbsp of paprika. You can add some garlic and other extra spices you prefer, such as rosemary or even sage.

Cooking Instructions

Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Cut the Sugar Pumpkin (1) in half and scrape out the seeds using a spoon. Cut the pumpkin into slices about 1-inch thick using a sharp knife.
Step 3
Transfer the slices onto a baking sheet lined with parchment paper. Drizzle the pumpkin with Extra-Virgin Olive Oil (30 mL) and rub it on both sides.
Step 4
Season with Kosher Salt (10 g) , Ground Cinnamon (3 g) , Ground Cloves (as needed) , Ground Nutmeg (as needed) , Ground Ginger (as needed) , and Brown Sugar (25 g) , and toss.
Step 5
Roast in the oven for 20-25 minutes. Enjoy!
