Author's Notes

Make sure to use a turkey that hasn’t been pre-brined; otherwise, your bird will be too salty. Pre-brined turkeys are usually labeled “enhanced”, “kosher”, “self-basting”, or “basted”.

Cooking Instructions

Step 1
In a large pot, combine Whiskey (720 mL) , Maple Syrup (480 mL) , Apple Cider (240 mL) , Kosher Salt (300 g) , Peppercorns (15 g) , Bay Leaves (4) , Garlic (5 cloves) , Fresh Rosemary (3 sprigs) , Orange Peels (3) , Apple Peels (3) , and Water (1.9 L) .
Step 2
Bring the mixture to a boil and stir until the salt dissolves completely. Turn off the heat, cover, and chill completely.
Step 3
Place your turkey in a large pot or a brining bag and pour in the maple whiskey brine. Make sure the bird is completely submerged. Leave the turkey to brine in the fridge for 12 to 24 hours.
Step 4
When ready for roasting, rinse the turkey and leave it in cold water for 15 minutes.
