Cooking Instructions

Finely chop the Scallions (1 bunch)
Step 2
Mince the Fresh Ginger (10 g) .
Step 3
Pit and chop the Plums (8) .
Step 4
Seed and chop the Chili Peppers (2) .
Step 5
Chop the Lemongrass (2 stalks) .
Step 6
Combine the plums, ginger, lemongrass, chili pepper, scallion, Garlic (2 cloves) , Soy Sauce (60 mL) , Sweet Soy Sauce (60 mL) , Honey (85 g) , Rice Vinegar (30 mL) , juice from the Lemon (1/2) , and Water (240 mL) in a heavy saucepan and bring to a rolling boil over medium heat.
Step 7
Reduce to medium-low and simmer, uncovered, until plums are very soft, about 5 minutes.
Step 8
Transfer mixture to a blender to process to a puree, then return to the pan.
Step 9
Taste for seasoning, adding more soy sauce, honey, or lemon juice as necessary. If too thick, thin with water.
Step 10
Transfer to a serving bowl and serve warm or room temperature. The sauce will keep, refrigerated, for up to 1 week.
