Cooking Instructions

Step 1
Mix together the Water (3.8 L) , Salt (300 g) , and Granulated Sugar (200 g) until dissolved in a large pot or another container.
Step 2
Add the Whole Chicken (1) and enough water to cover, then place in the refrigerator for 4 hours.
Step 3
Rinse the chicken and pat dry. Allow to thaw if needed.
Step 4
Combine the Salt (35 g) , Brown Sugar (25 g) , McCormick® Garlic Powder (20 g) , Ground Black Pepper (7 g) , Paprika (7 g) , and Fresh Rosemary (as needed) in a bowl.
Step 5
Rub the entire chicken with Olive Oil (1 splash) and sprinkle liberally with the spice rub mixture.
Step 6
Place the chicken in a cast iron skillet and smoke between 225 and 250 degrees F for 3.5 to 4 hours, until breast meat reaches 165 degrees F.
Step 7
Remove to a platter, tent with foil, and allow to rest for at least 20 minutes.
