Cooking Instructions

Step 1
Preheat oven to 400 degrees F (205 degrees C).
Step 2
On a small baking tray, roast unpeeled Garlic (4 cloves) for 30 minutes. You may want to roast a few extra cloves just in case some burn, feel free to roast a whole head of garlic if you like!
Step 3
Once the garlic is cooked, allow to cool and then remove the skin from 4 cloves. Using the back of your knife, mash garlic and Coarse Salt (6 g) into a paste on a cutting board.
Step 4
In a medium bowl whisk together Mayonnaise (230 g) , Olive Oil (30 mL) , juice of the Lemon (1/4) , and garlic paste.
Step 5
Season aioli with Salt (to taste) if needed. Store in an airtight container in the fridge for 1-2 weeks.
