Step 1
Whisk the
Oat Flour (425 g)

Granulated Sugar (150 g)
,
Baking Powder (10 g)
, and
Ground Cinnamon (5 g)
together in a large mixing bowl to aerate them.
Step 2
In another bowl, whisk the
Strawberry Greek Yogurt (285 g)
,
Almond Milk (240 mL)
,
Vanilla Extract (5 mL)
, and yolks of the
Eggs (3)
together until smooth.
Step 3
Pour those wet ingredients into the dry ingredients and whisk it all together until it is a thick batter.
Step 4
Take the Egg Whites and whip them up with a hand mixer until they are fluffy and stiff.
Step 5
Switch to a rubber spatula and fold the egg whites and
Granola (95 g)
into the batter.
Step 6
Preheat an electric griddle to 350 degrees F (180 degrees C) or heat a griddle pan over medium-high heat.
Step 7
Grease the griddle well with
Butter (to taste)
. Scoop the desired amount of batter per pancake onto the griddle in batches and let them cook for about 3 minutes on each side.
Step 8
Serve them as you make them with
Fresh Strawberries (to taste)
and
Maple Syrup (to taste)
