Step 1
Chop the
Salted Peanuts (75 g)

Heat a large skillet over medium heat. Add
Ground Chicken (455 g)
, shallots,
Salt (to taste)

Ground Black Pepper (to taste)
and cook, breaking chicken apart with a spatula, until the meat is almost cooked through.

Add the garlic and cook, stirring, for an additional 3 minutes.

Meanwhile, in a microwaveable bowl, combine the
Soy Sauce (30 mL)

Rice Vinegar (15 mL)
,
Sesame Oil (15 mL)
,
Peanut Butter (20 g)
,
Water (15 mL)
,
Honey (20 g)
and
Chili Garlic Sauce (35 g)
.
Step 5
Microwave on high in two 15-second intervals, stirring after each one.
Step 6
Add the liquid mixture to the chicken mixture and stir until combined.
Step 7
Add the green onions and water chestnuts. Stir until combined and cook over medium heat for 3 minutes, or until heated through.
Step 8
Remove from heat and divide the chicken mixture between the
Lettuce Leaves (8)

Step 9
Top with the chopped peanuts and serve.
