Step 1
In a small bowl, combine
Powdered Confectioners Sugar (110 g)

Cream Cheese (115 g)
, and
Milk (240 mL)
. Stir until creamy, adding an additional tablespoon of milk, if needed. Set aside, this will be your glaze for later.
Step 2
In a medium bowl, combine
All-Purpose Flour (125 g)
,
Granulated Sugar (25 g)
,
Baking Powder (7 g)
, and
Salt (6 g)
. Mix well.
Step 3
In a large bowl, combine
Milk (15 mL)
,
Egg (1)
,
Butter (30 g)
, and
Almond Extract (2 mL)
. Using a mixer or spoon, mix wet ingredients until creamy.
Step 4
Gradually add the flour mixture to the wet ingredients, stirring until batter is free of lumps.
Step 5
Place a skillet over medium heat and spray with cooking spray. Slice the
Fresh Strawberries (150 g)
.
Step 6
When the skillet is hot, add batter in 1/4 cup batches. Add
Sprinkles (to taste)
and sliced strawberry to each pancake before flipping, about 3 minutes on one side then flip.
Step 7
Cook other side for another 3 minutes. Then remove from heat, repeating the process until batter is gone. (Spray skillet with cooking spray before each new batch.)
Step 8
Heat the glaze in the microwave for 10-second intervals, stirring after each, until smooth. Pour over pancakes and top with extra strawberry and sprinkles.
