Step 1
Preheat oven to 400 degrees F (200 degrees C). Coat a 12-cup muffin pan with cooking spray.
Step 2
In a large bowl, whisk together All-Purpose Flour (155 g) , Dark Brown Sugar (110 g) , Baking Soda (2 g) , Baking Powder (2 g) , Ground Nutmeg (1 g) and Coarse Salt (3 g) until there are no lumps.
Step 3
Stir in Old Fashioned Rolled Oats (90 g) and Raisins (70 g) . Add Extra-Virgin Olive Oil (45 mL) , Farmhouse Eggs® Large Brown Egg (1) , Non-Fat Milk (80 mL) , Carrots (4) and Banana (1) and stir until blended.
Step 4
Fill each muffin cup with ¼ cup batter. Bake until a toothpick inserted in center of a muffin comes out clean, 18 to 25 minutes.
Step 5
Serve warm or at room temperature. To store, keep in an airtight container for up to 3 days.
