Author's Notes

Store in refrigerator for up to a week.

If not using Medjool dates, soak Deglet or other dates in water for 15 minutes before using, then drain water.

Measure 3/4 cup freeze-dried apples before grounding them, then add them to Nutritbullet, ninja maker, or a food processor and process to a fine powder.

Cooking Instructions

Step 1
Add Almonds (150 g) and Medjool Dates (175 g) to the bowl of a food processor and process for 10-15 seconds.
Step 2
Scrape down sides and add Freeze Dried Apples (90 g) , Walnuts (95 g) , Raisins (70 g) , and Ground Cinnamon (1 g) to the bowl and continue to process until a fairly smooth consistency is reached. You should be able to pinch some together and have it holds its shape. If it’s too dry, add Water (8 mL) and pulse another 5-10 seconds, then try the “pinch test” again.
Step 3
Line an 8x8 pan with plastic wrap, then add the mixture to the pan and spread out evenly, pressing firmly with your fingers.
Step 4
Once the mixture is evenly spread, use the back of a spatula to level the bars out, again pressing firmly.
Step 5
Refrigerate for 30-40 minutes.
Step 6
Remove from the refrigerator and cut into 10 bars, wrap individually in plastic wrap so they’re ready to take on the go! Enjoy!
