Preheat oven to 450 degrees F (230 degrees C).
Step 2
Spiralize Sweet Potatoes (960 mL) , then layer in cast iron skillet or oven safe casserole dish.
Step 3
Bake sweet potatoes for 15 minutes.
Step 4
In a bowl, Stir Chili Powder (3 g) , Smoked Paprika (1 g) , Ground Turmeric (1 g) , and Garlic Salt (2 g) into Vegetarian Refried Beans (1 can) .
Step 5
Remove sweet potatoes from oven, add seasoned refried beans, followed by Shredded Mild Cheddar Cheese (30 g) , Salsa (65 g) , and Organic Eggs (6) . Bake additional 15 minutes, or until egg whites are cooked and yolks are medium.
Step 6
Garnish with Avocados (to taste) , Cotija Cheese (to taste) , Fresh Cilantro (to taste) , and Sour Cream (to taste) . Serve and enjoy!
