Step 1
Place the
Unsweetened Shredded Coconut (300 g)
in a food processor.
Step 2
Blend on high until it begins to form a coarse paste, stopping the food processor and scraping down the sides of the bowl as you go.
Step 3
Add
Maple Syrup (60 mL)
,
Coconut Oil (5 mL)
, and
Peppermint Oil (5 mL)
.
Step 4
Blend on high for a few more minutes until well combined.
Step 5
Scooping a tablespoon of the mixture at a time, firmly pack together, shape into a ball and then flatten into a disc. Place on a baking paper-lined tray or cooling rack. This should make about 12 patties. Place in the refrigerator to harden.
Step 6
Melt the
Dark Chocolate (100 g)
along with the remaining
Coconut Oil (5 mL)
Remove patties from the refrigerator and discard baking paper.
Step 7
Using a fork, dip the patties into the melted dark chocolate. Tap off any excess chocolate and place on a cooling rack. Place back in the refrigerator to harden.
