Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Grease a 7-inch round cake pan or a loaf pan and line base with parchment paper.
Step 3
Beat Butter (125 g) and Caster Sugar (110 g) with electric mixer until light and fluffy. Add Eggs (2) , one at a time beating thoroughly after each addition followed by Vanilla Extract (2 mL) and juice from Lemon (1) and mix well.
Step 4
Stir in Orange Marmalade (40 g) and Oranges (2) zest with a rubber spatula, then Unsweetened Shredded Coconut (45 g) , Self-Rising Flour (225 g) and Milk (125 mL) .
Step 5
Spread mixture into cake pan; bake for about 60 minutes or until a skewer put into the center of the cake comes out clean.
Step 6
Leave the cake to cool in pan for 5 minutes, then take the cake from the rack to cool completely.
