Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
In a small pan, melt and brown the Unsalted Butter (85 g) . Set aside.
Step 3
In a small bowl whisk together Farmhouse Eggs® Large Brown Eggs (2) , Coconut Milk (360 mL) , and Vanilla Extract (5 mL) .
Step 4
In a large bowl, sift together the dry ingredients: All-Purpose Flour (185 g) , Whole Wheat Pastry Flour (120 g) , Baking Powder (7 g) and Salt (2 g) .
Step 5
Mix Coconut Sugar (170 g) and Unsweetened Coconut Flakes (150 g) into dry ingredients.
Step 6
Add milk mixture into dry ingredients. Mix with wooden spoon until incorporated.
Step 7
Add melted butter, mix until just incorporated. Pour into 9 x 5 loaf tin. Sprinkle with 1 Tbsp Coconut Sugar. Bake for about 1 hour, until golden brown and toothpick comes out clean.
Step 8
Let cool for 5 minutes in pan. Remove from pan and cool on wire rack.
Step 9
Serve warm with butter. Enjoy!
