Cooking Instructions

Step 1
Preheat the oven to 325 degrees F (160 degrees C) and lightly grease or line regular sized muffin pan.
Step 2
Add whole Oats (180 g) to food processor or smoothie attachment of Ninja and blend to a fine flour consistency.
Step 3
Add oat flour to medium bowl, followed by Unsweetened Cocoa Powder (45 g) , Baking Soda (2 g) , and Sea Salt (3 g) , stir to combine.
Step 4
Stir in finely grated Zucchini (195 g) and mix until zucchini is completely coated in the oat flour/cocoa mixture.
Step 5
Add the Honey (170 g) , Butter (60 g) , Eggs (2) , and Vanilla Extract (8 mL) , then mix until well combined, without over mixing.
Step 6
Stir in Semi-Sweet Chocolate Chips (85 g) , then divide equally into 12 muffins, top with remaining Semi-Sweet Chocolate Chips (20 g) .
Step 7
Bake 18-20 minutes, then allow to cool 10 minutes or so before removing and serving. Enjoy!
