Preheat oven to 350 degrees F (180 degrees C).
Step 2
Bring a large pot of water to a boil. Chop the Sweet Potatoes (3) , then throw them in. Cook for 15 to 20 minutes, or until fork tender, then drain. Mash until smooth then add Butter (60 g) , Milk (60 mL) , Vanilla Extract (5 mL) , Ground Cinnamon (1 g) , and Salt (2 g) . Stir until combined and set aside until cooled (room temperature), then stir in the yolk from the Eggs (4) .(reserve the whites).
