Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Cream the
Brown Sugar (55 g)
and
Unsalted Butter (135 g)
until light and whipped.
Step 3
Combine the
Salt (to taste)
with the
All-Purpose Flour (125 g)
and add to the butter and sugar mixture.
Step 4
With floured hands, press mixture into a floured 8×8-inch baking pan. I used a little butter on a paper towel to grease the pan then dust it with flour so it comes out easily.
Step 5
Bake the crust for 15-18 minutes or until lightly golden brown. Allow crust to cool.
Step 6
In a medium-size bowl, whisk
Just Jan’s® Meyer Lemon Curd (215 g)
and
All-Purpose Flour (30 g)
together.
Step 7
Once the crust is cool, spread the curd over the top and bake 20-25 mins.
Step 8
Let the bars cool then you can sprinkle with
Powdered Confectioners Sugar (to taste)
and
Lemons (to taste)
