Step 1
Melt the
Unsalted Butter (15 g)
and whisk half of it into the
All-Purpose Flour (125 g)
,
Eggs (2)
,
Salt (3 g)
,
Ground Black Pepper (as needed)
, and
Milk (240 mL)
.
Step 2
Stir in
Cheddar Cheese (40 g)
,
Dried Oregano (as needed)
and
Dried Thyme (6 g)
. Let the batter rest for an hour.
Step 3
Preheat the oven to 425 degrees F (220 degrees C). Put the rack in the upper third of the oven.
Step 4
Butter a standard size muffin tin, or use two mini-muffin tins with the remaining
Unsalted Butter (15 g)
and put in the oven until it sizzles.
Step 5
Stir the batter and divide between muffin cups. You may add a 1/2 tsp of
Just Jan’s® Apricot Fruit Spread (to taste)
to the batter in each cup.
Step 6
Bake for 18 to 20 minutes until they are puffed and golden brown. It’s best to serve them immediately.
