Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Cut Pattypan Squash (1) into 1/4 to 3/8-inch slices and lay them out onto two lightly greased pans.
Step 3
Wash and cook Sweet Potatoes (2) in the microwave (or oven if time permits).
Step 4
Add Onion (1/2) to pan and lightly spray with Coconut Oil Cooking Spray (as needed) and saute until transparent and soft.
Step 5
Set tender onions aside and cook Kale (1 handful) until tender crispy.
Step 6
Remove skins from cooked sweet potatoes and mash flesh with a fork in a bowl.
Step 7
Add Almond Milk (120 mL) and Garlic (1 clove) and stir until creamy.
Step 8
Smooth sweet potato mash over each patty pan slice and top with cooked onions and kale.
Step 9
Bake for approximately 10-15 minutes or until squash is soft.
Step 10
Once removed from the oven, sprinkle with Feta Cheese (35 g) and serve!
