Author's Notes

This recipe makes just enough to fill one 9-by-5-Inch Loaf Pan. I’ve tried using silicone loaf pans and even stoneware, but I find that the metal loaf pans work best for this bread. Non-stick or plain works just fine.

Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C). Grease your loaf and sprinkle about a tablespoon of flour evenly on it.
Step 2
Mix All-Purpose Flour (250 g) , Baking Powder (7 g) , Baking Soda (5 g) and Salt (1 pinch) in one bowl.
Step 3
Mix Eggs (2) , Butter (120 g) , Vanilla Extract (5 mL) , Milk (45 mL) , the juice from Lemon (1) , Bananas (150 g) , and Caster Sugar (180 g) in another.
Step 4
Slowly pour the dry ingredients into the wet mixture. Combine but don’t over-stir. Pour the batter into the prepared loaf pan and bake for one hour.
