Dried Beef SOS

RECIPE

My family always called this “Dried Beef Gravy” growing up. I know some people refer to the recipe as “SOS”, so I thought I’d compromise and call it “Dried Beef SOS”. SOS can be either beef or sausage-based. I prefer beef gravy for the salty and smoky finish.

Cooking Instructions

HIDE IMAGES
Step 1
Break apart Dried Beef (135 g) into bite-sized pieces. Place in frying pan.
Step 2
Heat frying pan to medium heat and add Butter (60 g) . Once butter is melted, stir well to coat the dried beef evenly.
Step 3
Remove pan from heat. Stir in well, the All-Purpose Flour (30 g) into the pan and return to medium heat to cook for another 3 minutes, stirring continuously. This will set up the "roux" mixture.
Step 4
Add the 2% Reduced Fat Milk (720 mL) , Salt (3 g) and Ground Black Pepper (1 g) . Stir frequently and cook until it begins to thicken, about 10-15 minutes. If the mixture starts to boil rapidly, it is too hot and you should reduce your temperature.
Step 5
Remove from heat and cover to keep warm while preparing the bread.
Step 6
Toast Sourdough Bread (8 slices) until your preferred texture. Break into bite-sized pieces.
Step 7
Serve SOS by putting down bread pieces on your plate and topping with the gravy. Add a dash of black pepper if you like a little more kick to your dish.
