Step 1
Drain and rinse the Pitted Green Olives (2 cans) . Shake excess water off.
Step 2
Slice the Pepper Jack Cheese (115 g) into small pieces sized to fit in the olives and stuff the olive with the cheese.
Step 3
Make the breading station: add the All-Purpose Flour (125 g) to one bowl, the whisked Eggs (3) in another, and in a third bowl add the Panko Breadcrumbs (50 g) .
Step 4
Lightly coat the olives in flour, then dip in the egg, then roll in the panko.
Step 5
Add an inch of Vegetable Oil (as needed) to a pot and heat until a deep-fry thermometer reaches 350 degrees F (175 degrees C). Add the olives, around 10 at a time, and fry for 45-60 seconds or until golden brown.
Step 6
Remove to paper towels to drain any excess oil.
Step 7
When the olives are all fried, lightly season with salt and a squeeze of Lemon (1) juice.
