Step 1
Preheat oven to 350 degrees F. Line loaf pan, about 5x10-inch, with parchment paper. Melt the
Unsalted Butter (75 g)
and allow to cool.
Step 2
Whisk together
All-Purpose Flour (155 g)
,
Kosher Salt (6 g)
, and
Baking Powder (4 g)
in medium bowl. Set aside. In a small bowl, stir together
Ricotta Cheese (120 g)
and
Half and Half (30 mL)
until smooth. Set aside.
Step 3
Combine zest from
Orange (1)
and
Granulated Sugar (200 g)
in a large mixing bowl, and using your fingers, rub the zest into the sugar.
Step 4
Whisk in 1/4 cup of Orange Juice,
Farmhouse Eggs® Large Brown Eggs (2)
, cooled butter, and
Vanilla Extract (5 mL)
.
Step 5
Fold in ⅓ of the flour mixture until just combined. Then fold in ½ of ricotta mixture. Continue this (flour, ricotta, flour, ricotta, flour) mixing after each addition.
Step 6
Pour batter into prepared loaf pan and place in preheated oven for 50 to 55 minutes until browned and golden and toothpick when inserted comes out clean.
Step 7
Remove cake from oven and let cool for about 10 to 15 minutes before turning out of pan and letting it cool completely before glazing.
Step 8
To make the glaze, sift
Powdered Confectioners Sugar (110 g)
into a small bowl. Add 2 1/2 Tbsp of juice from
Orange (1)
and whisk until smooth.
Step 9
Pour glaze over cooled cake.
