Cooking Instructions

Step 1
Cube the Butter (115 g) and beat the Egg (1) .
Step 2
Preheat oven to 425 degrees F (220 degrees C). Peel, pit, and slice the Peaches (2) and slice the Fresh Strawberries (300 g) .
Step 3
Mix the strawberries and peaches together in a bowl. Add the Granulated Sugar (25 g) and Vanilla Extract (5 mL) and toss to coat. Set aside while the crust is made.
Step 4
In a bowl, whisk the All-Purpose Flour (185 g) , Granulated Sugar (35 g) , and Salt (2 g) together.
Step 5
Cut in the Butter (120 g) until the mixture is crumbly. Add the Water (60 mL) , stirring with a fork until the flour is moistened. Add up to 2 tbsp of water if the dough seems dry. Gently knead until the dough comes together and forms into a ball.
Step 6
Line a pan with baking sheet. Roll dough into a 12 inch circle. Place circle on the sheet and spoon the fruit into the center of the dough leaving a 2 to 3 inch border. Gently fold the edges over the fruit, overlapping if necessary. Now pour all but 2 tbsp of juice on the fruit.
Step 7
Brush crust with beaten egg.
Step 8
Bake for 25 to 35 minutes. Enjoy!
