Step 1
Peel the
Granny Smith Apples (1.1 kg)
and thinly slice them.
Step 2
Preheat oven to 350 degrees F (180 degrees C). In a large bowl, toss the apples with the juice from
Lemon (1)
and
Granulated Sugar (100 g)

Step 3
In a large skillet, melt 1/4 of the stick of
Butter (30 g)
Add the apple mixture and cook over moderate heat stirring occasionally until softening but not brown.
Step 4
Scrape the apples into a large baking dish. Wipe out the apple bowl and add the remaining ingredients plus the rest of the
Butter (120 g)
. With your hands, break up the butter into the
All-Purpose Flour (185 g)
,
Old Fashioned Rolled Oats (65 g)
,
Brown Sugar (330 g)
,
Ground Cinnamon (8 g)
,
Salt (9 g)
and
Ground Cardamom (3 g)
until it resembles coarse crumbs. This is your topping.
Step 5
Scatter this over the apples and pat down.
Step 6
Bake the crisp for 40 to 50 minutes until the apples are bubbling and the topping is golden brown.
Step 7
Let cool and serve with
Crème Fraîche (to taste)
or vanilla ice cream. Enjoy!
