Step 1
Prepare your ingredients, and preheat the oven to 350 degrees F (180 degrees C). Grease, spray, or line with parchment paper a baking pan or cupcake tins.
Step 2
In a large bowl, whisk the All-Purpose Flour (250 g) , Granulated Sugar (400 g) , Dark Cocoa Powder (40 g) , Ground Cinnamon (4 g) , Baking Powder (4 g) , Baking Soda (5 g) , and Salt (6 g) .
Step 3
In another bowl, whisk Eggs (2) , Greek Yogurt (180 g) , Vegetable Oil (60 mL) , and Vanilla Extract (10 mL) until blended.
Step 4
Add the flour mixture, stir just until moistened.
Step 5
Stir in shredded Zucchini (260 g) .
Step 6
Transfer batter to pan and bake. Check periodically with a toothpick until it comes out clean. Cool completely on a wire rack.
Step 7
Dust with powdered sugar and serve, or top with chocolate glaze for frosting (see glaze recipe)!
