Step 1
To make the dough, combine
All-Purpose Flour (250 g)
,
Granulated Sugar (10 g)
,
Ground Cinnamon (1 g)
, and
Salt (6 g)

Step 2
Add in the
Butter (240 g)
and work in with fingers. Work until you have pea size pieces.
Step 3
Whisk the
Eggs (2)
and
Milk (60 mL)
together and add to dry mixture. When combined divide into two equal portions and wrap with plastic and chill for an hour.
Step 4
Peel and cut
Apples (2)
into bite-size pieces.
Step 5
Combine Apples,
Dark Brown Sugar (95 g)
,
Ground Cinnamon (3 g)
,
Salt (2 pinches)
, and 1 1/2 tsp juice from
Lemon (1)
into a frying pan and cook. Stir until the apples begin to cook and the sugar has dissolved.
Step 6
Cook until Apples begin to soften. Remove from heat. Strain the juices from the apples, keep both and cool.
Step 7
Preheat the oven to 375 degrees F (190 degrees C).
Step 8
Line a baking sheet with parchment paper. Dust a work surface with
All-Purpose Flour (to taste)

Step 9
Roll 1 dough out into a 12x10-inch rectangle. Cut that into 6 equal rectangle 3 1/2 by 4 1/2". Do this to second wrapped dough.
Step 10
Whisk
Egg (1)
and
Water (5 mL)
together. Brush a thin coat over each rectangle. Spoon 1 heaping Tbsp of filling onto each and spread also 1 1/2 tsp of juices. Put top on and pinch close with fork. Prick the top with a fork poke. Bake for 23-25 minutes.
Step 11
To make the glaze, combine sifted
Powdered Confectioners Sugar (80 g)
, 2 Tbsp reserved apple cinnamon filling juices, 2 tsp Lemon Juice and
Milk (10 mL)
.
Step 12
Drizzle with glaze when warm and serve.
