Step 1
In a large pot filled with cold water, add
Red Potatoes (680 g)
. Bring the pot to a boil and cook potatoes for about 35 minutes, or until fork-tender.
Step 2
While the potatoes cook, in a large bowl, combine
Mayonnaise (230 g)
,
Garlic (1 clove)
, juice from
Lemon (1)
,
Celery (2 stalks)
,
Red Onion (1/2)
,
Fresh Parsley (10 g)
,
Tarragon (2 g)
,
Salt (to taste)
and
Ground Black Pepper (to taste)

Step 3
Once the potatoes are cooked, drain and set them aside to cool. Once cooled, add them to the mayo mixture bowl.
Step 4
Serve with
Bacon (6 slices)
on top and enjoy!
