Author's Notes

Serves 16 bars. For the sweet potatoes, you can peel, boil and mash a fresh sweet potato, or use organic canned sweet potato or yams. I’ve used both options, as well as part of a carrot/sweet potato toddler pouch when in a pinch, and they’ve all turned out great!

Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C). Grease an 8x8-inch pan with Coconut Oil (as needed) .
Step 2
Add Creamy Peanut Butter (320 g) , Sweet Potatoes (60 mL) , Raw Cane Sugar (165 g) , and Vanilla Extract (5 mL) to a large bowl. Stir until well mixed and a smooth consistency is reached.
Step 3
To a small bowl, add Oat Flour (70 g) , Baking Soda (7 g) , Sea Salt (as needed) , and Chocolate Chips (55 g) , gently whisk to combine.
Step 4
Add dry ingredients to peanut butter mixture, then stir until well combined. Spread evenly into greased 8x8-inch pan.
Step 5
Top with 2 Tbsp of chocolate chips, gently pressing into the batter, then bake 10 minutes. The bars will look underdone, which is exactly what you want!
Step 6
Allow them to cool 20 minutes or so before eating. They’ll firm up as they cool and be rich, fudgy, and moist!
