Cuban Mojo is traditionally made with sour oranges which can be difficult to find. Combining fresh orange and lime juices gives you a close approximation - and tastes fantastic.

Step 1
Make the Mojo by mixing: Extra-Virgin Olive Oil (80 mL), Fresh Oregano (3 g), the juice and zest of Limes (2) and Orange (1). Add in Garlic (8 cloves) and Ground Cumin (2 g).
Step 2
Marinate the Center-Cut Pork Chops (4) (pork chops should be about 1-inch thick) in the mojo for at least an hour or two and up to overnight.
Step 3
Prepare a grill for direct heat cooking. Grill the thick center cut pork chops over a high flame until done to your liking. About 6 minutes per side for medium, 8 to 9 minutes per side for well.
