Step 1
Fresh Parsley (1 pinch)
In a bowl, combine
Mayonnaise (115 g)
, parsley, Pureed
Chipotle Peppers in Adobo Sauce (10 g)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
. Place in fridge and let flavors meld for at least 30 minutes.
Step 2
For balsamic onions, begin by thinly slicing the
Red Onions (2)
. In a hot pan, add
Olive Oil (30 mL)
and cook the onions over a medium-high flame until they begin to brown a bit. Add
Granulated Sugar (10 g)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
and turn the heat down to medium.
Step 3
Cook another 3 to 5 minutes until the sugar is absorbed and the pan is almost dry. Add
Balsamic Vinegar (120 mL)
and reduce heat to low.
Step 4
Simmer till all the vinegar is absorbed and pan is almost dry. Stir occasionally.
Step 5
On a griddle or cast iron pan cook
Beef Patties (4)
over medium-high heat. Season patties liberally with
Salt (to taste)
and
Ground Black Pepper (to taste)
cook one side.
Step 6
Flip, add
White Cheddar Cheese (4 slices)
and balsamic onions. Cook other side.
Step 7
Now put it all together. Bottom
Potato Buns (4)
, chipotle mayo, burger patty with cheese and onions, a touch of
Ketchup (to taste)
and finally the top bun.
