Mash the Bananas (2) .
Step 2
Preheat oven to 350 degrees F (180 degrees C).
Step 3
In a large bowl, combine Whole Wheat Pastry Flour (210 g) , Brown Sugar (55 g) , Baking Powder (4 g) , Baking Soda (5 g) , Salt (3 g) and Ground Flaxseed (20 g) .
Step 4
In a smaller bowl, mix the mashed banana, Egg (1) , Coconut Oil (120 mL) , Plain Yogurt (120 g) and Vanilla Extract (5 mL) .
Step 5
Mix wet ingredients into dry ingredients just until moistened.
Step 6
Fold in Dark Chocolate Chips (130 g) and Pecans (50 g) .
Step 7
Fill paper-lined muffin cups two-thirds full. Bake for 25 minutes or until a toothpick comes out clean.
Step 8
Cool for 5 minutes, transfer to wire racks and serve.
