Step 1
Peel and slice the
Onions (75 g)
into medium slices.

Finely slice the
Scallions (1 bunch)

Wash and slice the mushrooms into quarters.

Chop the
Cauliflower (160 g)
into medium sized florets.
Step 5
Heat a third of the
Oil (22 mL)
, the
Onions (75 g)
, the
Tomatoes (225 g)
, the
Garlic (5 cloves)
and the
Fresh Ginger (10 g)
clove (5) for 5 minutes.
Step 6
Allow to cool and blend with
Salt (to taste)
,
Granulated Sugar (2 g)
and
Chili Powder (1 g)
.
Step 7
Heat the remaining
Oil (22 mL)
and sauté onion (1/2 cup) until cooked.
Step 8
Next add
Mushrooms (250 g)
and cauliflower and sauté for 10 minutes.
Step 9
Add the sauce and simmer for 10 - 15 minutes until the curry reaches the desired consistency.
