Step 1
In a medium pan, combine the Tapioca Pearls (50 g) and Milk (240 mL) . Leave the mixture to soak for 1 hour.
Step 2
Add the remaining Milk (480 mL) .
Step 3
Add the Granulated Sugar (100 g) .
Step 4
Add the Eggs (2) .
Step 5
Add the Vanilla Extract (5 mL) and Salt (1 dash) .
Step 6
Heat the mixture over medium heat and stir frequently until the mixture simmers. Reduce the heat to low and continue cooking until the pudding is thickened and the pearls are soft enough to eat, approximately 15 minutes.
Step 7
Allow the mixture to cool on the stove for 15 minutes and then place in the fridge for 2 hours.
Step 8
Place 2 tablespoons of the Fruit Jam (160 g) in a ramekin.
Step 9
Gently spoon in 2/3 cup tapioca pudding.
Step 10
Top with 1/4 cup of the Fresh Blueberries (150 g) . Repeat steps 8-10 with the remaining 3 ramekins.
Step 11
Serve immediately!
