Step 1
Melt
Salted Butter (50 g)
in a saucepan over medium heat.
Step 2
Add
All-Purpose Flour (50 g)
and whisk rapidly to combine.
Step 3
Reduce to low heat and continue to whisk as the mixture cooks into a paste (roux), about two minutes. Be careful not to let it burn.
Step 4
Slowly begin incorporating
Milk (500 mL)
, a splash at a time, whisking continuously.
Step 5
Continue to add milk and cook until the mixture forms a paste, about ten minutes.
Step 6
Once mixture is smooth and thick, take off heat.
Step 7
Add in
Mature Cheddar Cheese (75 g)

Salt (to taste)

Ground Black Pepper (to taste)
