Step 1
Deseed
Red Chili Peppers (2)
and finely dice. Grate
Garlic (3 cloves)

Fresh Ginger (1 piece)
. Add all into a small bowl.

In the same bowl, add
Brown Sugar (25 g)
, juice of the
Limes (2)

Soy Sauce (80 mL)
. Mix until well combined.
Step 3
Slice
Chicken Thighs (905 g)
into 2-inch cubes and thread 4-6 pieces of chicken onto skewers. Add to marinade and set aside for 20 minutes.

Finely chop
Fresh Mint (10 g)
. Add to
Plain Greek Yogurt (140 g)
and season with
Salt (to taste)
, and
Ground Black Pepper (to taste)
. Set aside in the fridge until ready to serve.
Step 5
Finely dice the
Cucumbers (2)
and cut
Lime (1)
into quarters.
Step 6
Warm
Pita Bread (8)
in a dry pan for 2 minutes.
Step 7
Grill chicken skewers for 5-8 minutes, turning once halfway.

Serve chicken skewers with warm pita, yogurt dressing, cucumber, lime, and chopped mint.
