Step 1
Preheat the oven to 350 degrees F (180 degrees C). Spray an 8x12-inch baking sheet with vegetable spray and line the bottom with parchment paper. Set aside.
Step 2
Spread the Old Fashioned Rolled Oats (180 g) and Pecans (150 g) in an even layer on a baking sheet and toast in the oven for 10-12 minutes. Set aside.
Step 3
Reduce the oven temperature to 300 degrees F (150 degrees C).
Step 4
In a small bowl, stir together the Ground Cinnamon (3 g) , Ground Ginger (as needed) , Ground Nutmeg (1 g) , Ground Allspice (as needed) , Ground Cloves (as needed) , and Kosher Salt (2 g) . Set aside.
Step 5
In a small saucepan over medium heat combine the Butter (45 g) , Honey (170 g) and Brown Sugar (55 g) , stirring constantly until the butter has melted and the sugar has dissolved. Stir in the Vanilla Extract (5 mL) and the spice mixture and set aside.
Step 6
Transfer the oats and pecans to a large bowl. Add the Wheat Germ (55 g) , Pepitas (110 g) and Golden Raisins (145 g) and toss to combine. Pour the honey mixture over the oat mixture and stir until well coated.
Step 7
Pour the granola mixture into the prepared pan and press evenly and firmly into the pan. Bake the granola for 25 to 30 minutes or until light golden brown.
Step 8
Remove from oven and cool to room temperature. This will take 2 to 3 hours.
Step 9
Remove from the pan and cut into bars or squares. Store in an airtight container for up to 5 days.
